Business, Marketing, and CommunicationThis program prepares students to be ethical, self-confident, knowledgeable, flexible, and technologically prepared business professionals that are able to perform effectively and efficiently in a diverse environment that is constantly changing.
By helping students develop their personal and professional skills, they will be expected to analyze, synthesize, and evaluate complex business situations. Students work in team-orientated environments and professionally research, analyze, present and communicate their work in oral and written format. Upon completion of their program, they will be expected to apply the core management functions of planning, organizing, leading and controlling to achieve an organization’s desired goals.
Students choose between a major in Administration or Human Resources.

Baking and Pastry
Culinary Arts, Food Service, and NutritionThe Baking & Pastry Diploma program is designed to prepare graduates for an entry-level position in a variety of food-service industry work settings. The program emphasizes safety, sanitation, the understanding of weights and measures, ingredients, baking methods, and the development of basic skills. Students learn through a combination of lecture, demonstration and extensive practice in kitchen labs. They also produce breads and desserts for the school’s open-to-the-public restaurant which gives them valuable practical experience prior to their externship and graduation.
In the intensive, hands-on Baking & Pastry programs at Oregon Culinary Institute, we offer a methodical approach to classic principles and techniques. You’ll have the opportunity to learn product identification, weights and measures, how leavening agents work; the function of ingredients and how they behave under different temperatures; the mechanics of kneading and the art of blending; mixing methods and how they’re applied; the principles and idiosyncrasies of chocolate tempering and sugar work; the technique of cake formulas and assembly; and the delicate artistry of decorative showpiece work, such as wedding cakes. You will also have the opportunity to gain valuable practical experience, prior to your externship and graduation, by producing breads and plated desserts for OCI’S open-to-the public restaurant.

Students learn through a combination of lecture, demonstration, extensive practice in the schools’ kitchen labs and open-to-the-public restaurant, and gain valuable experience during their externship at a school-approved industry property. Legal Assistant / Paralegal
Legal, Law Enforcement, and Emergency ServicesAt Pioneer Pacific College, students in the Paralegal Associate of Applied Science Degree Program learn how to handle all duties required to work in a professional setting. Paralegals are detail-oriented, can follow direction, work well in teams and enjoy a fast-paced work environment.
Under the supervision of an attorney, paralegals often work directly with clients in preparation for their case, “hand hold” the client and serve as the clients’ direct contact. For many paralegals, this assistance to clients is one of the most satisfying aspects of their job.
Pioneer Pacific College’s Paralegal Associate of Applied Science degree is one of only two schools in the state of Oregon that offers a paralegal program approved by the American Bar Association. Paralegals may not provide legal services directly to the public, except as permitted by law.

Medical Assisting
Medicine and Health CareThe Medical Assisting program is designed to prepare the graduate for an entry-level position in a physician’s office or medical clinic. The program emphasizes the development of clinical skills to train students for positions such as medical assistant, medical receptionist, health plan coordinator and medical insurance customer service representative. Students learn not only in the classroom, but also in a laboratory which simulates the facilities, equipment, and records found in both the clinical and administrative areas of ambulatory care centers.

Radiologic Technology
Medicine and Health CareThe Radiologic Technology program prepares students to practice as proficient, multi-skilled professionals in a culturally diverse health care setting; to demonstrate outcomes required by the American Registry of Radiologic Technologists (ARRT) and program guidelines; and to apply for and successfully complete ARRT certification examination and possess the qualifications of an entry-level radiographer.

Practical Nursing
NursingAfter successful program completion, graduates will be eligible to apply to the Oregon State Board of Nursing (OSBN) to sit for The National Council Licensure Examination, or NCLEX-PN. Once licensed, the graduate may be employed as a Licensed Practical Nurse (LPN). The student will:
